As for all of our wines, Poventa took its name from the dialect of the Val di Chiana. The term “Poventa” refers to a quiet, wind-sheltered place. A serious, warm, robust wine, Poventa is suitable for aging and is produced from a blend of Sangiovese and Syrah. The accurately selected grapes are picked by hand and placed in crates. The two varieties are then processed separately. Following pressing and stripping, the grapes are placed for about three days in steel vats where they undergo crio-maceration at low temperatures. The fermentation is done at a controlled temperature with frequent racking and délestage. After four weeks, the wine is drawn-off and the skins are pressed, separated and processed. Following accurate tasting, the two wines are blended and aged in tonneaux for 18 months followed by another 18 months in bottle.
